Savoury Jalapeño Oatmeal

And what’s for breakfast on the boat most mornings is Savoury Jalapeño Oatmeal. Now a savoury oatmeal may not sound like the oatmeal you’re used to, but hear me out. Like a lot of people, when I think about oatmeal, sweet and fruity breakfasts come to mind. But I’m really more a savoury breakfast kind of girl.

So the other morning, when we were out of jalapeño buns for toast and I had a perfect avocado waiting for me, I knew I needed savoury and spicy breakfast. That is how Savoury Jalapeño Oatmeal was born.

Making Savoury Jalapeño Oatmeal on a Boat

The Instant Pot makes steel cut oats super easy! Dump everything in and wait about 20 minutes.

Once it’s ready, I usually give it a stir and put it in the fridge since I prefer it cold.

But regardless of whether you eat it cold or warm, the toppings are where it’s at! My go-to toppings are an avocado, green hot sauce (Trader Joe’s Green Dragon is my favourite) and Everything But The Bagel Seasoning.

If I don’t have an avocado at the perfect ripeness, I enjoy a couple scoops of hummus with the hot sauce and seasoning. Other options include a poached egg or leftover roasted veggies.

Since the recipe makes enough for five breakfasts, I usually make a batch on Sunday and enjoy all week.

Savory Jalapeño Oatmeal

Oatmeal doesn’t have to be sweet!! This Savory Jalapeño Oatmeal, proves that oats work for non-sweet breakfasts too. And it’s quick and easy in the Instant Pot making for an easy morning meal.

INGREDIENTS

  • 2 cups water
  • 2/3 cup unsweetened oat milk - (or your favourite milk or more water)
  • 2 jalapeños - diced and seeds removed
  • 1 1/3 cups steel cut oats
  • 1/2 tsp kosher salt
  • 1/2 tsp ground pepper
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp coriander
  • 1/2 tsp paprika
  • pinch red pepper flakes

My Usual Toppings

  • avocado
  • green hot sauce - (Trader Joe's Green Dragon Hot Sauce is my favourite!)
  • Everything But The Bagel Seasoning - to taste

Other Topping Options

  • poached egg
  • roasted veggies
  • hummus - to taste

Instructions

  • Add the water, milk (if using), steel cut oats (do not use any other kind of oats), jalapeños and seasonings to your Instant Pot and stir.
  • Place lid on pressure cooker and set the vent to sealed. Cook on HIGH pressure for 3 minutes. Let the pressure release naturally for 10 minutes.
  • Oats may seem runny at first, but they will set-up as they cool a bit.
  • Spoon into your favourite bowl and top with avocado or toppings of choice. Don't forget the hot sauce and Everything But the Bagel seasoning.

Notes

Store leftovers in the fridge for up to 5 days. Reheat or enjoy straight from the fridge.
