Mediterranean Watermelon Salad

Have you ever seen recipes and even items on menus that just don’t sound right? That is how I felt about watermelon salad. I didn’t understand the sweet melon mixed with the savoury add-ins like cucumber and feta. So I never ordered it and definitely never made it.

Then a few months ago, my mother-in-law served one of these salads. And of course I had to at least try it. Much to my surprise and delight, I loved it. And wondered where it had been all my life. Oh yeah, I had turned my nose up without even giving it a chance. Definitely my loss.

And with summer here, I’m buying watermelons regularly. (Well the mini version so they fit on the boat. Pretty sure a full-size one would take up most of my kitchen counter) And I needed a savoury watermelon recipe.

Easy to make on the boat

Enter this Mediterranean Watermelon Salad recipe from The Mediterranean Dish. It is super easy to make and I pretty much follow the recipe. The only changes I make is to cut it in half and substitute dried herbs for the fresh ones because of space considerations on the boat. And I usually use agave syrup instead of honey.

It tastes like summer, in my opinion, and with summer finally here in British Columbia, it’s a regular side for our BBQs. And any leftovers work great for Handsome Hubby’s work lunches.
