Easiest Broccoli Tuna Casserole (Instant Pot)

Possibly the easiest broccoli tuna casserole thanks to frozen veggies, canned tuna and an Instant Pot. Dinner in less then 30 minutes and clean-up is a breeze!

Ingredients

  • 5 cups uncooked egg noodles
  • 1 tbsp canola or olive oil
  • 1/4 cup chopped onion
  • 32 ounces vegetable broth
  • 2-5 oz cans tuna drained
  • 2 cloves garlic
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/4 tsp red pepper flakes
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 tsp salt
  • 4 cups frozen broccoli florets
  • 1 cup shredded cheese dairy or non-dairy
  • 1/2 cup milk dairy or non-dairy
  • 1 1/2 tbsp nutritional yeast
  • 1 cup frozen peas optional

Instructions

  • Heat Instant Pot using saute and add oil. Add onions and cook until translucent (about 5 minutes)
  • Turn Instant Pot off, add the egg noodles to the Instant Pot
  • Pour vegetable broth over and around noodles
  • Place tuna and broccoli over noodles and season with spices
  • Set Instant Pot to manual for 4 minutes. Once cooking complete, release pressure immediately.
  • Stir in nutritional yeast, milk, cheese and peas (if using) until cheese is melted and casserole thickens (about 5 minutes).
  • Enjoy

Notes

I use either Daiya or Violife shredded cheddar style for the non-dairy cheese and whatever non-dairy milk I have on hand (make sure it’s unflavoured).
