We made it to the Octopus Islands!! And we left a little piece of Shiloh for posterity.

When we purchased our Shiloh the previous owner gave us the name that hung in his covered moorage. It seemed appropriate to leave it here - Shiloh has helped us fulfill so many dreams!

Some days a girl’s just gotta have nachos for lu

Some days a girl’s just gotta have nachos for lunch! Especially after a bumpy night on the hook in Desolation Sound’s Tenedos Bay.

Step 1 - Preheat your oven. We have the MagicChef oven that came with Shiloh. Some may call it old. We prefer to call it “the best oven EVER to make nachos in”. For us, the preheat temperature is 350.

Step 2 - Prep your toppings. Not many today since a veggie provision is upcoming, but some red onion is always tasty. As are pickled jalapeños. If only I could find where I put them. Perhaps they are with the two bottles of soy sauce that are MIA. Oh well, at least there were a couple in the jalapeno olives jar.

Step 3 - Shred your cheese. Today’s combo was jalapeño Monterey Jack and medium cheddar.

Step 4 - Cook your nachos. Into the oven for about 5 minutes (or so). Once the cheese is almost to the perfect stage of meltiness pop them under the broiler. Crank the heat to 500 and wait for 20-30 seconds.

Step 5 - Enjoy your nachos. We savoured ours with some salsa and a cold beer.

Step 6 - Take in the view. It’s not everyday we get lunch with a view like this - we’re lucky to spend our summers here.
