To be fair, this winter has been pleasant. Our warm, albeit rainy, January had continued into February. That is until, Family and Valentine’s Day weekend. After a few days of bitter cold (by my Lower Mainland standards) started to give way and we woke up to snow. ⠀
⠀
And even though we had to shovel and running was a little slippery, it was fun and really pretty. Yeah, I’m glad it melted away a couple of days later. I also wish the same for others still battling snow and cold.⠀

Wednesdays are clean out the fridge day and provision for another week on our boat. And this week’s clean out dinner will be hard to top - Smoked Pork Belly BBQ Pizza!⠀

Hubby had done a quick smoke on some pork belly last weekend. Some went into his work breakfast casserole but there were (yummy) leftovers. And I found some spinach and mushrooms looking for a new home. (Most of the mushrooms went into vegetable soup, but I saved a couple for dinner).⠀

I used my deep dish pizza dough recipe and topped it with a Smoked Jalapeño BBQ sauce, a layer of fresh spinach, some mozzarella, then diced pork belly and mushrooms, more mozzarella and finally a drizzle of the BBQ sauce.⠀

Yes, Pizza Day was yesterday but life kept us from celebrating, so today it is!⠀

Happy National Tater Tot Day!! I have a weakness for the bagged version but our limited freezer space makes it easier to say no.

Then a few weeks ago, a recipe for potato croquettes by @biancazapatka came across my feed. There is probably some culinary difference between a tot and a croquette, but they look similar so I decided to try the recipe today.

And this boat version of tater tots were very, very good! We served them with jalapeño black bean burgers on pretzel buns for a fun Tuesday boat dinner.
