Nine Vegetarian Recipes for Life on a Boat

Eating vegetarian and plant based meals makes life on a boat simpler. Beans, lentils and grains do not require refrigeration or freezing like most meats. And with limited fridge and freezer space, I appreciate the extra space. In honour of World Vegetarian Day, here are nine of my favourite vegetarian recipes for life on a boat (or land).

1. Bangers and Mash (Plant Based)

This recipe is inspired by a brewery in Bellingham, Washington where I first tried vegetarian bangers and mash. By making the mashed potatoes in the Instant Pot, dinner is ready in about 30 minutes. Feel free to try other veggies in place of the peas – roasted brussels sprouts are a good choice. [get the recipe]

2. Vegetarian Quinoa Chili (Plant Based, Slow Cooker)
