
Nine Vegetarian Recipes for Life on a Boat
Eating vegetarian and plant based meals makes life on a boat simpler. Beans, lentils and grains do not require refrigeration or freezing like most meats. And with limited fridge and freezer space, I appreciate the extra space. In honour of World Vegetarian Day, here are nine of my favourite vegetarian recipes for life on a boat (or land).
1. Bangers and Mash (Plant Based)
This recipe is inspired by a brewery in Bellingham, Washington where I first tried vegetarian bangers and mash. By making the mashed potatoes in the Instant Pot, dinner is ready in about 30 minutes.
