Then a few months ago, my mother-in-law served watermelon salad. And of course I had to at least try it. And much to my surprise and delight, I loved it. And wondered where it had been all my life. Oh yeah, I had turned my nose up without even giving it a chance. Definitely my loss.

Enter this Mediterranean Watermelon Salad recipe from The Mediterranean Dish. It is super easy to make and I pretty much follow the recipe. The only changes I make is to cut it in half and substitute dried herbs for the fresh ones because of space considerations on the boat. And I usually use agave syrup instead of honey.
